RAW CHOCOLATE CHIP PEANUT BUTTER COOKIE BALLS / LAURENARIZA.COM

I never really saw the hype with this kind of thing… maybe because I’m a salty > sweet person BUT when I watched my kid mow a couple down in a split second at our favorite coffee shop, I decided to give them a try. I tailored them to our liking/pantry (and made them a tad more cost-effective than some other recipes I’ve found) and they turned out so good that I decided to post ‘em. They’re packed with protein, gluten free, quite low in sugar, and I snuck flax and chia seeds in there too … best of all: THEY TASTE LIKE A COOKIE.

You will need:
1 cup plus 3 Tbs creamy peanut butter (I used Trader Joe’s Organic Creamy which has *looser consistency and it worked great.)
1/2 cup coconut flour
1/2 cup almond flour
1 Tbs ground flax
1 tsp chia seeds
2.5 Tbs maple syrup
1/3 tsp vanilla
Pinch of salt
Chocolate chips (this part is up to you and your chocolate preferences 🙂 I used a handful… also mini chocolate chips are a great option)

Combine all ingredients in a mixing bowl. Stirring with a spatula at first to get the mixture going. Once you’ve gotten it mixed, use your (clean) hands to knead until a homogenous, dough-like mixture is formed. If your mixture seems a bit crumbly and dry, add a bit more peanut butter.

Once your mixture is formed, use your hands to roll into balls about 1.5″ in diameter. Set aside until all your dough is used. Eat right away or pop in the fridge for 10 minutes to set and store in an airtight container in the fridge or at room temperature. I prefer room temp, but they will keep longer in the fridge. Enjoy!

Makes roughly 25 balls.
