This pasta dish is among my favorites,  it’s super light and fresh [for pasta that is] and might be the easiest thing you will ever make. You literally just cook the pasta and toss in all your fresh ingredients.

You will need:

1 lb linguine

1 1/2 cups chopped fresh basil

3/4 cup chopped fresh chives

3/4 cup chopped fresh parsley

The zest of two lemons & and juice of one (about 2 Tbs zest & 1/4 cup juice)

1 1/2 cups grated Parmigiano Reggiano (the real stuff)

drizzle of Extra Virgin Olive Oil

salt & pepper (to taste)

First get your pasta cooking in generously salted water according and to the directions on the package. While your pasta cooks, chop your herbs, grate your cheese, & zest/juice your lemon/s. The zest and herbs can sit together in a bowl, but I recommend keeping the lemon juice and parm separate until they meet the pasta.

*** I have a confession to make: the chives at the market were in awful condition so I subbed in green onions for this post [pictured] . If the same thing happens to you go ahead and use green onions but I really think the chives are nicer in this dish.

Once your pasta has cooked strain and transfer to a large bowl. Throw in cheese first and toss. Add a generous sprinkle of salt, pepper, lemon juice, zest, herbs, and a drizzle of olive oil (aka the rest of your ingredients) and toss again. Taste and adjust, adding more salt if needed. Top with a little sprinkle of cheese (*optional) and DONE.
