Summer is coming!!!! So, I decided to create a fruity cocktail to get into the spirit over here. This gal is sweeter than most drinks I make, but she’s super fresh and the rosemary cuts a bit of the sweetness with it’s herbaceous-ness. Cheers!

You will need:

2-4 large sprigs of rosemary (about 1/2 cup roughly chopped plus extra little sprigs for garnish)

3/4 cup sugar

1 1/4 cup water

3 cups roughly chopped watermelon

1 cup roughly chopped strawberries

Vodka

Juice of 1/2 a lemon

Sparkling water/club soda

Start by detaching and chopping your rosemary. Throw it and your water and sugar into a small saucepan. Heat over medium-low heat and let rosemary steep (and sugar dissolve) for about 10 minutes.

While your rosemary steeps, chop your watermelon and strawberries. Place fruit into a pitcher.

When your rosemary has steeped for about 10 minutes, pour it over your fruit (no need to let it cool). Using a drink muddler, begin to breakdown your fruit.

Squeeze your 1/2 of a lemon in and pour your your vodka in, I used 2 cups (use less if you like, but it is a martini folks). Place pitcher in the fridge to chill for at least an hour.

Once your drink has fully chilled strain and pour into small glasses (I just strain it straight into each glass, but if it’s easier you can strain the whole thing into a new pitcher). Top each glass with a splash of cold club soda.

Add a sprig of rosemary, and serve!
