This recipe is a favorite of mine because not only is it delicious, but instead of using oil or butter to roast the nuts, I use whipped egg whites which cuts any excess fat. Also, you can use just about any combination of spices you like!
You will need:
1 egg (whites only)
2 heaping cups roasted unsalted almonds
2/3 cup brown sugar
1 1/2 Tbs chopped fresh rosemary
1/2 tsp salt
1/4 tsp cayenne
1/4 tsp onion powder
First preheat your oven to 300 F.
Chop your rosemary and get your spices together…… This rosemary should not be making me as upset as I CLEARLY am in this picture, because its what makes this recipe so awesome.
Crack your egg and carefully separate the yolk from the white. You only need the whites in this recipe.
Beat your egg white. Whether its with an electric mixer or a whisk make sure you beat them until frothy and no liquid is left at the bottom.
Once your egg whites are frothy mix in your spices and sugar (everything but the nuts).
Pour the mixture over your almonds, stir to incorporate, and spread evenly onto a baking sheet. Be sure that none of your almonds are on top of one another.
Bake at 300 for 15 minutes. Remove and stir. Lower heat to 250 and cook an additional 10 minutes, remove, and let cool. The mixture will harden as it cools. Once the nuts have cooled, transfer to a serving bowl and enjoy!
