Okay…..this light, airy candy might be my favorite dessert that ever existed. And with crushed candy canes sprinkled on top, it makes the perfect holiday gift. Sweet, crispy, delicious! No one will be disappointed with this one.

You will need:

1 1/2 cups granulated sugar

3 Tbs light corn syrup

1 Tbs honey

1/4 cup water

1 Tbs baking soda (sifted)

1 package semi-sweet chocolate

1 tsp vegetable oil

crushed peppermint candies

First, prepare a sheet tray by covering it with wax paper or foil that has been greased. Set aside.

In a pan large enough for the mixture to triple in size, combine sugar, corn syrup, honey, and water. Heat over medium-low heat until sugar dissolves, stirring occasionally.

Raise heat to high and bring mixture to a boil. Do not stir the mixture, but swirl the pan every once in a while and carefully brush any sugar crystals that have accumulated on the sides with a wet pastry brush.

Continue doing this until the sugar mixture reads 300 degrees on a candy thermometer or becomes a light amber color.

Turn off the heat. this is where things get CRAZY! Quickly sift in the baking soda and stir to incorporate. The mixture will PUFF UP immediately! As soon as it does, poor on to the prepared tray. Be careful not to disturb the mixture or spread it. Let it settle naturally.

Meanwhile as the comb cools prepare your chocolate. Combine the chocolate and vegetable oil in a microwave safe bowl and microwave the mixture until it is completely melted. Stirring every 15-25 seconds. Be sure not to overcook your chocolate or it will become too stiff to work with.

Once the honeycomb has cooled completely (about 20 minutes) gently break it into the size you desire.

Once all of your honeycomb has been broken, dip each piece in the hot melted chocolate and place on a tray lined with foil and sprinkle with crushed peppermint pieces (optional) let sit to cool. Continue these steps until all your honeycomb is covered.

Once the chocolate has set store in an airtight container. These little heavenly bits are best right after they’ve been made but will still be delicious for quite a while.
