I guess you could consider this fun, frozen treat an “adult slushy” but better. You don’t need any fancy gear for it either, just a freezer and a fork!

You will need:

1 bottle dry or Brut champagne (I used the cheapest stuff out there and it turned out great)

1 cup thyme simple syrup

2 1/2 Cups prepared lemonade

Zest and juice of one lemon (2 if its a dry one)

2 tsp chopped fresh thyme leaves

First make your simple syrup. In a small sauce pan combine one cup of sugar, one cup of water, and about 5 sprigs of thyme. Bring to a simmer and let sugar dissolve. Turn off heat and let thyme steep in the syrup and completely cool. Discard the sprigs of thyme.

In one 9×13″ glass casserole dish combine champagne, lemonade, simple syrup, zest, juice, and chopped thyme. Stir to incorporate.

Put the mixture uncovered, on a flat surface in your freezer. After about 1 hour take a fork and drag it through the mixture to  break up any ice crystals that have formed. Repeat this every 20- 30 minutes until you get airy shave ice-like crystals.

Spoon into glasses and serve with a sprig of thyme or two and a spoon.
