GRAPEFRUIT AND THYME PALOMA // LAURENARIZA.COM
The PALOMA! If you haven’t had one yet, the future is looking bright (and refreshing) for you. Even if you don’t make my recipe (which you should because it’s awesome hahah) there is a good chance that your local, hand-crafted cocktail joint has one on the menu as they have recently become very popular. If you follow me on instagram then you probably saw my comparison to the popularity of the Moscow Mule a few years back. You also, probably then read that in particular cases I think popularity is well deserved, which I definitely think is the case here! So here it is, my spin on the classic Paloma aka YOUR NEW FAVORITE SPRING (AND SUMMER) COCKTAIL. Cheers!

You’ll notice the measurements are in “parts”. I do this to make it adjustable to the amount of people you are serving. If you are making one cocktail then do one shot-glass portion per ingredient, if serving two, do two shot-glass portions of each, if making a pitcher use 1 cup (or more) per ingredient etc. As long as the parts are equal your recipe will turn out. Hope that makes sense!

You will need:
1 part tequila
1 part fresh ruby red grapefruit juice
1/2-1 part Thyme Simple Syrup (this is dependent upon your sweetness preferences. Start with 1/2 and add more to taste)
The juice of 1 lime (per cocktail)
Splash of Club Soda
*Optional Garnish (I used a sprig of thyme and blood oranges because I had them on hand and they’re so pretty but even a slice of grapefruit would be beautiful!)

For the Thyme Simple syrup-
1 cup water
1 cup granulated sugar
8-10 sprigs of fresh thyme

Thyme Simple Syrup
In a small saucepan combine your sugar and water. Stir over medium heat until sugar is completely dissolved. Remove from heat and add your thyme. Let thyme steep for about 15 minutes as the mixture cools. Strain through mesh strainer, discard your thyme, and set aside. (syrup can be refrigerated for up to a week). *If you want the classic Paloma- leave the thyme out.

Fill your glasses and cocktail shaker with ice. In your cocktail shaker combine all of your ingredients except your club soda and garnish. Shake vigorously and pour over ice. Top with a splash of club soda, garnish and serve! (if making a large batch you can just stir all the ingredients together and top with club soda)
