I make breakfast for Josh every morning. This information always seems to impress people, especially when they hear or see what the breakfast consists of. What I don’t think they realize is the LITTLE amount of effort I actually put in every morning. The truth is that I usually just reassemble or rearrange last night’s dinner. Now I know we all have busy schedules (especially those with children) BUT I swear breakfast takes me less than 10 minutes most mornings so even if this just becomes a weekend practice I promise it will be totally doable.

This is not necessarily a recipe post, but more of a “get the juices flowing” post. Take a look at the combos below and see what looks good and  how you can rearrange last night’s dinner into an insanely impressive breakfast.

Just remember, when in doubt THROW AN EGG ON IT.

“Chicken Curry Scramble”

Pretty much every time I make any sort of curry we make a scramble out of it the next morning. I will say that it is probably Josh’s favorite breakfast of all time. All I do is reheat the curry in one pan and scramble our eggs in a separate pan. I cook EVERY scramble in two pans. One for the filling the other for the eggs. I do this to avoid muddy looking eggs BUT feel free to cook them in the same pan if you’re over it. Just cook the eggs first and warm the curry through afterwards with the eggs.

A lot of times I will top our scrambles with something cold ie. sliced cherry tomatoes, fresh avocado, herbs etc. This time we only had cilantro so that’s what I used! And Josh wanted some toast to soak up the sauce, so there ya have it!

“Refried Bean Stack”

I recently made barbacoa style tacos with a side of homemade refried beans and rice. We ended up having quite a bit of meat left over from the tacos so I invented this ditty with the side dishes and taco fixings too! So filling and delicious! I reheated the beans and meat separately and layered them on the bottom of the dish- beans first, topped with a little cheese, then meat. Then threw an egg on top, some sliced avo and fresh pico de gallo (both left over from the night before).  Salt and pepper a squeeze of lime and done! 

*Feel free to use canned refried beans and do a layer of rice too if you have it!

 

“Breakfast Gyros”

This is definitely one of the experimental ones I wasn’t sure would work out but it totally did! I had made lemony dill chicken in the crock pot the day before for gyros and had all the stuff left over after. I basically just scrambled some eggs and added them to my chicken gyro! Topped with fresh spinach, mint, cucumbers, tomatoes, and homemade tzatziki all from the night before!

“Fried Egg over Cauliflower Mash”

OK, this might be the least exciting one but it was SO good and satisfying. The night before I had made a cauliflower mash- I steam or boil 1 clove of garlic, about 80% cauliflower and 20% yellow or white Potato with the skin on (I add the potato to give it a thicker texture) and mix in a little cream cheese and butter while I mash it… adding milk if its too thick. Season with salt and pepper.

I reheated the mash the next morning, crisped up the edges of my egg for texture and threw em together with some fresh herbs. Honestly so so good.

“Breakfast Hash”

This one requires a bit more time and effort so keep scrolling if you’re not into it. It takes leftover raw veggies and turns them into a hash to top with eggs. These particular times I had, a few little potatoes, some raw butternut squash, onion, peppers, bacon. Use any veggies you have though!

I diced everything super small (rinsing the diced potatoes in water and towel drying to remove some starch and to help them crisp faster). Threw the whole kit and caboodle in a large oiled frying pan allowing all the veggies to have contact with the pan (not letting them stack on top of one another). Stir this mixture as little as possible, allowing them to form a crispy crust. Add salt and pepper to taste.

I then threw them into their bowls and topped with eggs, bacon, tomatoes, and arugula. Done!

“Breakfast Tacos”

Very similar to the gyros, I basically added eggs to our taco scenario from the evening before! This time we had run out of  our carnitas so I just cooked up some bacon and it was great! (Usually we eat corn tortillas but this time we had flour left over for some reason.)

“Ropa Vieja over Crispy Rice Cakes with Cilantro and Manchego “
 
This one takes a little preparation too because of the rice cakes so I make this one on weekends. But I used leftover ropa vieja (recipe here ) and left over rice from the dish. I reheat the meat and make rices cakes by combining left over rice, an egg or two depending on how much rice you are using, a good amount of shredded manchego and chopped cilantro. Form them into cakes and fry on both sides until crisp. Let rest on paper towels until ready to eat. 

In your bowl layer a rice cake, top with ropa vieja and a fried egg. DONE!

Or you can just eat what I eat most days. Not kidding the morning I took this picture of my actual breakfast, Josh was eating the chicken curry up above hahahahahahahah. I love to cook it but I don’t have a huge morning appetite (insert guilty emoji face)
