EASY REFRESHING WATERMELON AGUA FRESCA | LAURENARIZA.COM
I had promised a plethora of “agua fresca” recipe options a little while back on both of my instagram accounts (@laurenariza and @recipeschmecipe) and I have two written out and more to come so I thought I’d post this as a “work in progress” in the meantime since summer is quickly passing us by! So here are two versions of a watermelon fresca to start!

 

WATERMELON GINGER AND LIME AGUA FRESCA
You will need:
2 cups water
7-8 cups cubed watermelon (about 1/2 of a medium sized melon)
1-2 Tbs sugar or honey (depending on sweetness of your melon)
1/4 cup lime juice
1-2 inches of fresh peeled ginger, roughly chopped (2 Tbs give it a spicy ginger kick, 1 results in a more mellow flavor)

Toss it all in a blender. Buzz until smooth. Pour through fine strainer. Discard pulp. Chill. Pour over ice and enjoy! You can also add sparkling water for some bubbles or make it into a cocktail with some vodka, tequila, or gin!

 

WATERMELON AND ROSEMARY AGUA FRESCA
You will need:
7-8 heaping cups of fresh cubed watermelon
2 cups water
2 Tbs sugar
4-6 sprigs of fresh rosemary
¼ cup fresh lime juice

In a small saucepan heat your water and sugar over medium-high heat until boiling. Throw in your rosemary and turn heat off. Let rosemary mixture cool to room temperature and strain through a fine strainer. Discard rosemary.
In a blender, combine all of your ingredients (including strained sugar mixture) and blend until smooth.
Pour entire mixture through a fine mesh strainer and discard solids.
Chill in the fridge until ready to serve.
