This one is just SO easy and SO quick I had to post it. It’s a simple concept, but I think that’s what side dishes/starter bites should be…easy, so you can put your focus into other things: the guests, the main dish, the laundry etc. I do have to warn all the ‘detail sticklers’ out there though that I am giving rough measurements… RECIPE SCHMECIPE FOLKS!

You wil need:

Salt

Pepper

1 16 oz. package of edamame in it’s shell (cooked, you can also buy precooked and just thaw it)

Drizzle of cooking oil (whichever kind you like. I used Olive Oil)

2 cloves garlic (chopped)

Pinch red pepper flakes (more if you like spicy, less if you don’t)

1 Tbs brown sugar

A couple splashes of low sodium soy sauce

Chopped green onions (about a handful)

About a Tbs Furikake *seaweed and sesame seed topping that is intended for rice (or sesame seeds if you can’t find it)

The juice from half a lemon (or 1/4 of a really juicy one)

In a saucepan large enough to hold all of the edamame heat your oil and sauté garlic, red pepper flakes, salt, and pepper on medium for about 3 minutes.

Add brown sugar and stir to dissolve.

Throw in your soy sauce and let cook down for another 3 minutes or so. Add your edamame and toss to coat.

Let cook until heated through and soy begins to coat the edamame. Toss in your lemon juice, furikake, and green onions let cook another minute or so and serve!
